In light of Thanksgiving, I wanted to post this casserole that we have every year at this time. It's a corn and macaroni casserole. It's really good and a great alternative to the plain old cream corn casseroles out there.
Corn and Macaroni casserole
Ingredients:
1 can creamed corn
1 can sweet corn
1 cup Velveeta
1 cup macaroni
1 stick oleo
Directions- Put both cans of corn in a casserole dish. Do not drain the regular corn! Cut up your stick of oleo and add to the casserole dish. Cut up or shred your cheese and add to the dish. Add uncooked macaroni to the dish also. Mix it up and stick it, covered in the oven at 350. It takes anywhere from a half hour to an hour, or until noodles are done. When I think it is close to being done, I uncover the dish and let it cook some more to brown on the top. That also keeps it from over flowing and making a mess in your oven.
I suppose you could make this a healthy version, by substituting some items. You could use whole wheat macaroni, omega 3 butter, reduced or 2% cheese.
